A five modular course covering the most important culinary basics that eventually allows you to successfully cook an almost unlimited number of delicious dishes. Suitable for beginners but experienced cooks will also gain a lot from this culinary experience.

 

Module 1

Soups

 

- Overview of the Culinary Diploma

- Introduction to Stocks: chicken (prepared by Chef)

- The big question: what does the concept of cooking mean?

- The importance of kitchen sanitation and food safety

- Preparing and cooking a selection of soups

- Sensory test: the cause and effect of food and wine

- Chef's Table: sit-down dinner with wine

 

Module 2

Vegetables

 

- Overview of previous week’s class

- his week’s stock: vegetable (prepared by participants)

- Knife handling skills

- Practical: application of cutting techniques (vegetables)

- Food Tastings

 

Module 3

Pasta

 

- Overview of previous week’s class

- This week’s stock: beef

- Methods of Cookery - theory

- Pasta dough and rolling

- Cooking of Dinner

- Food Tastings

 

Module 4

Fish

 

- Overview of previous week’s class

- This week’s stock: fish

- Methods of Cookery - theory

- Menu Planning and Design

- Fish Cookery

- Food Tastings

 

Module 5

Meat

 

- Overview of previous week’s class

- Understanding the different knife cuts

- Applying the correct cooking method

- Meat Cookery

- Chef's Table: sit-down dinner with wine

 

All classes are scheduled from 6 to 9.30pm
